- 2 cup lentils dried
- 3 whole carrots
- 1 whole onion
- 3 clove garlic diced
- 1 whole sweet potato
- 1 can tomatoes 28oz, diced
- 1 can coconut milk
- 3 cup vegetable broth
- dash thyme, oregano, salt, pepper to taste
- whole squash optional
- 1 whole avocado garnish
- 1 dash sriracha (optional) to taste
Instructions
- Put lentils in crock pot
- Chop veggies and tomatoes & put on top
- Sprinkle spices on top
- Pour in liquids
- Cover & cook on HIGH for ~5 hours
- Top bowls with avocado and drizzle of sriracha to serve
