Can be used as a dip, taco meat, in casseroles, burritos, sloppy joes or lots of other things.

- 2 tsp olive oil
- minced onion
- 2 clove garlic
- 2.5 cup cooked lentils
- 3 tbsp tomato paste
- 2 tbsp BBQ sauce
- .5 tsp oregano
- 2 tsp chipotle
- 1 tsp cumin
- .5 tsp coriander
- salt pinch
Lentils
- Combine 1 cup lentils + 2 cups water.
- Cover & simmer ~ 40 minutes.
Instructions
- Combine spices & set aside
- Preheat pot to med-high
- Saute onion & garlic in oil
- Add spices & toss 30 seconds
- Lower heat to medium, add lentils, a splash of water, tomato paste & BBQ sauce
- Mash lentils as they cook until they hold together
- Keep adding splashes of water as necessary
- Cook ~5 minutes
