Socca is a traditional French flatbread, but can be used anytime some kind of flatbread is needed. We use it as a pizza crust or to complement lentils berbere.



Prep time: 5 minutes
Cooking Time: 15 minutes
Total Time: 20 minutes

Preheat Temperature

500° Farenheit

  • 2 cup Chickpea flour
  • 2 cup water lukewarm
  • .5 tsp salt
  • 1 tsp chia seed
  • 4 tbsp olive oil


  1. Whisk well
  2. Cover and let sit an hour or longer
  3. Preheat oven to 500F with skillet
  4. Add any spices or greens to batter
  5. When heated, remove skillet & swirl 1tbsp olive oil to coat bottom
  6. Slowly pour half of the batter into the skillet
  7. Bake 10 minutes
  8. Add toppings & bake another 3-5 minutes
  9. Move to plate & cut
  10. Use another tbsp oil for second socca
