- 6 whole potatoes peeled, cut in 1/2" pieces
- 1 whole onion chopped
- 1 quart vegetable broth (4 cups)
- 2 clove garlic
- 2 tbsp margarine
- 1 dash nutmeg
- 2 tsp curry powder
- 1/4 cup nutritional yeast (optional)
- 1 package spinach (or one big bunch), chopped
- 1 cup almond milk
- 1 cup red lentils
Instructions
- Put all ingredients into a slow cooker
- Cook on high 4 hours
- Stir in milk & nutritional yeast (if desired)
