Palak Tofu

  • 25 oz spinach 1.5 pounds
  • 2 whole red chilies
  • 1/2 cup cilantro
  • 1 whole onion diced
  • 1 tbsp cumin seeds
  • 6 clove garlic
  • 4 tbsp coconut oil
  • 1/2 cup oat milk
  • 1 package tofu
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 1 tsp salt
  • 1 tbsp lemon juice

Instructions

  1. Heat 1 Tbsp oil in a skillet & fry tofu cubes until golden (alternately, bake with a small amount of oil for 35 - 40 minutes, flipping halfway through)
  2. Toss half the spinach, chilies & cilantro in blender with a little water & puree
  3. Chop the other spinach
  4. Heat rest of oil in a wide pot
  5. When oil is hot & shimmering, toss in cumin seeds & cook 10 seconds
  6. Add the onion & saute until soft & translucent
  7. Add garlic & cook 2 minutes
  8. Add pureed spinach & cook 10 minutes
  9. Add chopped spinach, garam masala, milk, salt & turmeric
  10. Let cook 10 - 15 minutes
  11. Turn off heat & add lemon juice
