- 25 oz spinach 1.5 pounds
- 2 whole red chilies
- 1/2 cup cilantro
- 1 whole onion diced
- 1 tbsp cumin seeds
- 6 clove garlic
- 4 tbsp coconut oil
- 1/2 cup oat milk
- 1 package tofu
- 1 tsp turmeric
- 1 tsp garam masala
- 1 tsp salt
- 1 tbsp lemon juice
Instructions
- Heat 1 Tbsp oil in a skillet & fry tofu cubes until golden (alternately, bake with a small amount of oil for 35 - 40 minutes, flipping halfway through)
- Toss half the spinach, chilies & cilantro in blender with a little water & puree
- Chop the other spinach
- Heat rest of oil in a wide pot
- When oil is hot & shimmering, toss in cumin seeds & cook 10 seconds
- Add the onion & saute until soft & translucent
- Add garlic & cook 2 minutes
- Add pureed spinach & cook 10 minutes
- Add chopped spinach, garam masala, milk, salt & turmeric
- Let cook 10 - 15 minutes
- Turn off heat & add lemon juice
