Pad Pra Ram Sauce

  • 4 tbsp coconut oil
  • 2 clove garlic minced
  • 2 tsp fresh ginger grated (or 1/2tsp ground)
  • 4 tsp red curry paste
  • 4 tbsp coconut sugar
  • 4 tbsp tamari
  • 2 tsp bouillion
  • 1 cup water
  • 1 can coconut milk
  • 1 cup peanut butter
  • .25 cup peanuts (optional)

Instructions

  1. Add coconut oil to saucepan on medium hot
  2. Add ginger, garlic & curry paste and cook 1-2 minutes
  3. Add vegetable broth, peanut butter, coconut milk, brown sugar & soy sauce & whisk until smooth
  4. Bring to boil then reduce to simmer
  5. Cook another ~5 minutes, stirring frequently, until sauce has thickened
  6. Top with peanuts if desired
