- 2 tbsp olive oil
- 4 clove garlic minced
- 2 whole onions chopped
- 3 cup corn
- 2 whole yams peeled, chopped
- 6 whole tomatillos chopped
- 6 whole tomatoes chopped
- 28 oz canned tomatoes diced
- 8 oz green chiles diced
- 2 quart vegetable broth
- 28 oz coconut milk
- 60 oz black beans or any beans
- 1 hand cilantro chopped
- 3 whole lime juice
- 2 tsp cumin ground
- 1 tsp chipotle ground
Instructions
- Heat oil in large soup pot, stir in spices, cook for one minute.
- Add onion, garlic, cook for five minutes.
- Add all veggies. Sir, then pour in broth. Bring to a high simmer for 40 minutes, till yam is tender.
- Add coconut milk and beans. Turn down heat and stir a few minutes.
- Add cilantro and lime juice before serving.
