Corn Chowder

  • 2 tbsp olive oil
  • 4 clove garlic minced
  • 2 whole onions chopped
  • 3 cup corn
  • 2 whole yams peeled, chopped
  • 6 whole tomatillos chopped
  • 6 whole tomatoes chopped
  • 28 oz canned tomatoes diced
  • 8 oz green chiles diced
  • 2 quart vegetable broth
  • 28 oz coconut milk
  • 60 oz black beans or any beans
  • 1 hand cilantro chopped
  • 3 whole lime juice
  • 2 tsp cumin ground
  • 1 tsp chipotle ground

Instructions

  1. Heat oil in large soup pot, stir in spices, cook for one minute.
  2. Add onion, garlic, cook for five minutes.
  3. Add all veggies. Sir, then pour in broth. Bring to a high simmer for 40 minutes, till yam is tender.
  4. Add coconut milk and beans. Turn down heat and stir a few minutes.
  5. Add cilantro and lime juice before serving.
