Cashew Asian Noodle Salad

  • Sauce
  • 8 tbsp cashews (sauce)
  • 4 whole green onions
  • 2 tbsp fresh ginger
  • 2 whole garlic clove minced
  • 4 tbsp sesame oil
  • 2 tbsp lime juice
  • 2 tbsp tamari
  • 2 tbsp rice vinegar
  • 4 tbsp water
  • 1/2 tsp salt
  • Noodles & salad
  • 12 oz ramen noodles
  • 1 whole red cabbage small, sliced thin
  • 3 whole carrots large, spiralized or shredded
  • 1/3 cup mint leaves
  • 2 whole green onions diced
  • 1 bunch cilantro
  • 1/2 cup cashews

Instructions

  1. Cook the noodles
  2. Blend all sauce ingredients until smooth. Use the stems of the green onions for the sauce.
  3. Assemble the other ingredients. Use the green parts of the onions for the salad.
  4. Add noodles when ready.
  5. Top with dressing & cashews.
  6. Toss until mixed.
