- Sauce
- 8 tbsp cashews (sauce)
- 4 whole green onions
- 2 tbsp fresh ginger
- 2 whole garlic clove minced
- 4 tbsp sesame oil
- 2 tbsp lime juice
- 2 tbsp tamari
- 2 tbsp rice vinegar
- 4 tbsp water
- 1/2 tsp salt
- Noodles & salad
- 12 oz ramen noodles
- 1 whole red cabbage small, sliced thin
- 3 whole carrots large, spiralized or shredded
- 1/3 cup mint leaves
- 2 whole green onions diced
- 1 bunch cilantro
- 1/2 cup cashews
Instructions
- Cook the noodles
- Blend all sauce ingredients until smooth. Use the stems of the green onions for the sauce.
- Assemble the other ingredients. Use the green parts of the onions for the salad.
- Add noodles when ready.
- Top with dressing & cashews.
- Toss until mixed.
