- 4 tbsp coconut oil
- 2 clove garlic minced
- 2 tsp fresh ginger grated (or 1/2tsp ground)
- 4 tsp red curry paste
- 4 tbsp coconut sugar
- 4 tbsp tamari
- 2 tsp bouillion
- 1 cup water
- 1 can coconut milk
- 1 cup peanut butter
- .25 cup peanuts (optional)
Instructions
- Add coconut oil to saucepan on medium hot
- Add ginger, garlic & curry paste and cook 1-2 minutes
- Add vegetable broth, peanut butter, coconut milk, brown sugar & soy sauce & whisk until smooth
- Bring to boil then reduce to simmer
- Cook another ~5 minutes, stirring frequently, until sauce has thickened
- Top with peanuts if desired
