  • 14 oz noodles fettucini or pad thai
  • 14 oz tofu (one block)
  • 1/2 cup coconut aminos (or tamari, or soy sauce)
  • 2 1/2 tbsp coconut sugar (more if using soy sauce or tamari)
  • 16 oz brocolli
  • 6 whole garlic cloves minced
  • 1/4 cup water

Instructions

  1. steam the broccoli
  2. cook the noodles until soft
  3. combine soy sauce, water & brown sugar
  4. fry the tofu until golden
  5. reduce heat to medium then add garlic & cook until beginning to color (less than a minute)
  6. add sauce, broccoli & noodles & toss until coated with sauce. cook ~4 minutes
