Maple Apple Muffins

Preheat Temperature

400° Farenheit

  • 1 1/4 cup oats
  • 1 1/2 cup almond milk
  • 1/2 cup buckwheat flour
  • 1/2 cup oat flour
  • 1/2 cup sorghum flour
  • 1/2 cup tapioca starch
  • 1/2 tsp psyllium husk powder
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/3 cup coconut sugar
  • 1/2 cup maple syrup
  • 1/4 cup apple sauce, unsweetened
  • 1/4 cup coconut oil melted
  • 2 tsp vanilla extract
  • 2 cup apple finely diced
  • 1/4 cup shredded coconut unsweetened

Instructions

  1. Preheat oven to 400 degrees F. Combine oats and almond milk.
  2. In large bowl, mix dry ingredients.
  3. Add rest of wet ingredients to oat mixture. Pour wet mix over dry and add diced apples.
  4. Stir just until combined. Spoon into muffin pan and top with coconut if desired. Bake for 20 minutes.
