Instapot Peanut Noodles

  • 10 clove garlic
  • 2 tbsp ginger minced
  • 2 whole bell peppers sliced thin
  • 6 whole green onion
  • 5 tbsp soy sauce
  • 3 tbsp rice vinegar
  • 3 tbsp honey
  • 1 tbsp sriracha
  • 6 tbsp peanut butter
  • 16 oz spaghetti (or fettucini or ramen)
  • 3 cup water
  • 1 bunch cilantro chopped
  • 1 whole lime juice of
  • peanuts
  • 4 whole carrots chopped thin

Instructions

  1. Saute oil, garlic & ginger until they start to change color
  2. Add veggies including green onion & toss to combine
  3. Separately, whisk soy sauce, vinegar, honey, sriracha, peanut butter & salt & add to the Instapot
  4. Add noodles & water. Water should just cover the noodles.
  5. Seal and cook on high pressure for 4 minutes
  6. Add lime juice, cilantro and crushed peanuts & serve
