- 2 tbsp olive oil
- 2 whole onion diced
- 6 clove garlic
- 2 tsp powdered ginger
- 4 tsp fenugreek powder
- 2 tsp turmeric
- 3 tsp garam masala
- .5 tsp cumin
- .5 tsp coriander
- 1 tsp salt
- 2 tbsp maple syrup
- 30 oz diced tomatoes (2 cans)
- 8 cup cauliflower chopped
- 1 cup cashew basil cream sauce
- .5 cup cashews
Instructions
- Set Instapot to saute
- Add oil
- Add onion & garlic & cook 3-4 minutes until onions are caramelized
- Add spices, cook 2 minutes, stirring constantly & adding water, if needed
- Add tomatoes, syrup, cauliflower
- Seal Instapot and set to high pressure for 2 minutes
- Wait 1 minute and quick release
- Add cashew cream and top with cashews
