Cauliflower Tikka Masala

  • 2 tbsp olive oil
  • 2 whole onion diced
  • 6 clove garlic
  • 2 tsp powdered ginger
  • 4 tsp fenugreek powder
  • 2 tsp turmeric
  • 3 tsp garam masala
  • .5 tsp cumin
  • .5 tsp coriander
  • 1 tsp salt
  • 2 tbsp maple syrup
  • 30 oz diced tomatoes (2 cans)
  • 8 cup cauliflower chopped
  • 1 cup cashew basil cream sauce
  • .5 cup cashews

Instructions

  1. Set Instapot to saute
  2. Add oil
  3. Add onion & garlic & cook 3-4 minutes until onions are caramelized
  4. Add spices, cook 2 minutes, stirring constantly & adding water, if needed
  5. Add tomatoes, syrup, cauliflower
  6. Seal Instapot and set to high pressure for 2 minutes
  7. Wait 1 minute and quick release
  8. Add cashew cream and top with cashews
