Burrito Filling (InstaPot)

  • 2 tbsp olive oil
  • 1 whole medium red onion chopped
  • 1 tbsp bell pepper chopped small
  • 3 clove garlic
  • 15 oz black beans (can)
  • 1 1/2 cup uncooked rice
  • 1 1/2 cup corn
  • 12 oz salsa (1 1/2 C)
  • 2 cup water
  • 1 tsp cumin
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp salt to taste

Instructions

  1. Saute onion, bell pepper & garlic in oil for 2-3 minutes
  2. Turn off instapot and scrape the bottom
  3. Add the rest of the burrito filling & stir
  4. Set to HIGH pressure for 24 minutes
  5. Assemble burritos
