- .5 cup Chickpea flour
- 2 tbsp Nutritional yeast
- 1 tbsp ground flax seed
- .25 tsp baking powder
- .25 tsp Turmeric
- .25 tsp Paprika
- .25 tsp Black pepper
- .75 cup water
- 1 tbsp Tamari
- 1 - 2 tsp Olive oil
Instructions
- In a medium bowl, stir together dry ingredients.
- Add wet ingredients & whisk until blended.
- Let sit for 10 minutes.
- Stir fry veggies to desired tenderness.
- Coat medium skillet with oil and pre-heat skillet on high heat.
- Pour half of batter onto skillet and lower heat to medium.
- Cook until bubbles appear in center (about 4 minutes).
- Flip and cook another 2 minutes.
- Transfer to plate.
- Fill omelette with veggies and fold over.
