Veggie stuffed vegan omelette

  • .5 cup Chickpea flour
  • 2 tbsp Nutritional yeast
  • 1 tbsp ground flax seed
  • .25 tsp baking powder
  • .25 tsp Turmeric
  • .25 tsp Paprika
  • .25 tsp Black pepper
  • .75 cup water
  • 1 tbsp Tamari
  • 1 - 2 tsp Olive oil

Instructions

  1. In a medium bowl, stir together dry ingredients.
  2. Add wet ingredients & whisk until blended.
  3. Let sit for 10 minutes.
  4. Stir fry veggies to desired tenderness.
  5. Coat medium skillet with oil and pre-heat skillet on high heat.
  6. Pour half of batter onto skillet and lower heat to medium.
  7. Cook until bubbles appear in center (about 4 minutes).
  8. Flip and cook another 2 minutes.
  9. Transfer to plate.
  10. Fill omelette with veggies and fold over.
