- 2 tbsp olive oil
- 1 whole medium red onion chopped
- 1 tbsp bell pepper chopped small
- 3 clove garlic
- 15 oz black beans (can)
- 1 1/2 cup uncooked rice
- 1 1/2 cup corn
- 12 oz salsa (1 1/2 C)
- 2 cup water
- 1 tsp cumin
- 2 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp salt to taste
Instructions
- Saute onion, bell pepper & garlic in oil for 2-3 minutes
- Turn off instapot and scrape the bottom
- Add the rest of the burrito filling & stir
- Set to HIGH pressure for 24 minutes
- Assemble burritos
