Preheat Temperature
400° Farenheit
- 1 1/4 cup oats
- 1 1/2 cup almond milk
- 1/2 cup buckwheat flour
- 1/2 cup oat flour
- 1/2 cup sorghum flour
- 1/2 cup tapioca starch
- 1/2 tsp psyllium husk powder
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/3 cup coconut sugar
- 1/2 cup maple syrup
- 1/4 cup apple sauce, unsweetened
- 1/4 cup coconut oil melted
- 2 tsp vanilla extract
- 2 cup apple finely diced
- 1/4 cup shredded coconut unsweetened
Instructions
- Preheat oven to 400 degrees F. Combine oats and almond milk.
- In large bowl, mix dry ingredients.
- Add rest of wet ingredients to oat mixture. Pour wet mix over dry and add diced apples.
- Stir just until combined. Spoon into muffin pan and top with coconut if desired. Bake for 20 minutes.
