Toffee Cinnamon Oatmeal Bars

  • 2 tbsp flax ground
  • 6 tbsp water warm, mix with flax for egg substitute
  • 1.5 cup coconut sugar
  • 2 tsp vanilla extract
  • 1Tbsp + .25 cup coconut oil
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1.5 cup oats
  • 2Tbsp + 1.5 cup oat flour
  • 1.5 cup almond flour

Instructions

  1. Preheat oven to 350F
  2. Line 2 8x8" pans with parchment paper
  3. Mix flax & water in small bowl
  4. In a large bowl, beat sugar & oil & vanilla until smooth
  5. Add flax mix
  6. Add dry ingredients & mix
  7. Smooth dough into pans and even out
  8. Sprinkle chocolate chips on top, if desired
  9. Bake 20 minutes
  10. Let cool 10 minutes, then lift out and cool another 10 minutes on cooling rack
