- 2 tbsp flax ground
- 6 tbsp water warm, mix with flax for egg substitute
- 1.5 cup coconut sugar
- 2 tsp vanilla extract
- 1Tbsp + .25 cup coconut oil
- 1 tsp baking soda
- 1 tsp salt
- 2 tsp cinnamon
- 1.5 cup oats
- 2Tbsp + 1.5 cup oat flour
- 1.5 cup almond flour
Instructions
- Preheat oven to 350F
- Line 2 8x8" pans with parchment paper
- Mix flax & water in small bowl
- In a large bowl, beat sugar & oil & vanilla until smooth
- Add flax mix
- Add dry ingredients & mix
- Smooth dough into pans and even out
- Sprinkle chocolate chips on top, if desired
- Bake 20 minutes
- Let cool 10 minutes, then lift out and cool another 10 minutes on cooling rack
